FEATURE - CUSCO TYPICAL KITCHENS

Today you can still find traditional cuisine of the ancient Peruvians, especially in small towns around the region of Cuzco, which are rural areas where these kitchens preserve the essence and heritage of the Andean tradition among its walls.

When entering a cuisine of Cusco, it is very likely to see a large room with a wood stove in one of the walls, intended for cooking a variety of foods. Increasing our view, llama fetus and skulls of animals can be seen hanging from the ceiling. According to local tradition, these objects look after the home and family. Under the stove, and protected away from the cold, we can find the guinea pigs. These rodents are bred by peasant families in the area, with ears of corn, alfalfa and other vegetables, and consumed later.

The tools used today in a typical Peruvian food are: pottery, spoons, mortars, "fulling" and "Chaco". Current materials are wood, ceramic and metal. However, after the Spanish conquest and the modern times, pots, containers and other kitchen items they were replaced by native clay utensils, as metals were expensive at the time and only came from Europe.

Mills, mixers and wooden jars for chocolate: Still portions of these prehistoric utensils such as the "Molcajete", the "comal" and "metate", while others that were totally new and used hybrid born for cooking.
