Throughout the year, Sumaq works with producers from high-Andean communities such as Quishuarcancha, Parcaraqui, and Huatata, in Chinchero, as well as the community of Ccorca. With high-quality ingredients, such as native potato varieties grown in Huatata, we combine modern culinary techniques to create dishes that have been recognized at international gastronomic events, including City Meals on Wheels in New York and Virtuoso's Culinary Globetrotting in Las Vegas. We value these long-standing relationships with our local suppliers, who bring our culinary offering to life and keep Andean planting and harvest traditions alive
